Not sure where my reading process is going now...I'm just along for the ride. Here is Louisa Master's "The Dragon Experiment." It's the third novel in her Here Be Dragons series, which is a Hidden Species spin-off

These dragons just keep getting more and more...eccentric. Fabian goes from documenting thousands of years of history to asking the origins of the missionary position to researching Welsh history to becoming obsessed with Rhys. And this all started because he say a ring, and his dragon said 'mine' so loudly that Fabian didn't hear that the ring was magic. He's a genius one moment and completely gullible the next (maybe gullible isn't 100% the right word...highly distracted by anything and everything in a way that could either come across as adorable or unhinged).
Rhys is a man of science so of course Fabian confusing the fuck out of him. But Rhys also found him endearing as hell. He was smitten right from the beginning, knew that he could fall in love with this dragon so easily (and get his heart broken just as easily).
